Tradition Royal Caviar comes from white sturgeon, a species native to the Pacific Ocean and found from Alaska to Baja California. The latter is among the longest-lived sturgeons, reaching 100 years of age, a weight of 800 kg and a length of 6 meters.

It is particularly appreciated, in addition to its lean flesh with a high protein content, for its copious production of large eggs, from 2.8 to 3.2 millimeters, characterized by a color that varies from dark gray to black.

Its caviar is perfectly balanced and round in taste, reminiscent of the sea only in its most delicate components.

It satisfies the most demanding palates of all ages throughout the world thanks to its gourmet notes, typical of pastry.

Royal Oscietra caviar from the Black Sea and the Sea of ​​Azov. Medium size, it can weigh 20 to 60 kilos.
We obtain this caviar with a supple, fruity taste with a slight aroma of hazelnut and a color that oscillates between dark brown and beige only from larger eggs (between 2.9 and 3.2 millimeters). Many consider it to be the finest quality to be enjoyed neat.
